

Roasted beef roll
Ingredients
- 1 wholegrain bread roll (see tip)
- 2 teaspoons wholegrain mustard
- 2 tablespoons low-fat ricotta cheese
- 50g sliced rare roasted beef
- ¼ firm ripe avocado, sliced
- 1 small Roma tomato, sliced
- ½ small Lebanese cucumber, sliced
- ½ cup (25g) baby rocketarugulaX

Instructions
1 Spread one side of roll with mustard, the other side with ricotta. Top bottom half of roll with roasted beef, tomato, avocado, cucumber and rocket. Top with other half of roll.
Variations
- Make it gluten free: Use a gluten-free bread roll and check mustard is gluten free.
