Ingredients
- 500g new potatoes, halved
- olive oil spray
- 4 x 150g skinless chicken breast fillets
- 1 lemon, cut in thin wedges
- ½ cup black olives
- 5 sprigs fresh thyme
Instructions
1 Preheat oven to 200°C. Place potatoes in a large baking dish and spray with oil. Bake for 20 minutes or until light golden brown.
2 Add chicken, lemon wedges, olives and thyme to baking dish. Spray with oil. Bake for 25 minutes or until chicken is cooked through. Serve.
