Spinach with raisins and pine nuts

- 500g spinach, stalks removed, torn
- 1 tablespoon olive oil
- 3 spring onions, finely chopped
- 3 tablespoons raisins
- 2 tablespoons toasted pine nuts

Instructions
1 Rinse spinach well. Shake off excess water. Place in a non-stick pan and cook over a medium heat until just wilted. Drain well. Set aside.
2 Add oil to pan. Cook spring onions for 4-5 minutes.
3 Return spinach to pan. Add raisins and pine nuts. Warm through.
4 Season with black pepper and serve.
