Strawberry vanilla trifles

  • 1 sachet Weight Watchers no-sugar strawberry jelly
  • 6 gingernut biscuits, roughly chopped
  • 8 tablespoons orange juice
  • 200g strawberries, sliced
  • 1 ⅓ cups skim milk
  • 1 teaspoon vanilla paste
  • 4 teaspoons custard powder
  • 1 tablespoon sugar
  • To decorate
  • 4 teaspoons Greek yoghurt
  • 4 fresh mint sprigs
  • 2 fresh strawberries, sliced

    1 Dissolve jelly crystals in 1 cup boiling water. Stir to dissolve. Add 4 ice cubes and leave to cool. Place gingernuts in the base of four glasses. Sprinkle over orange juice. Add strawberries.

    2 Pour cooled jelly over strawberries and leave to set.

    3 Make custard by placing 1 cup of milk and vanilla in pan and heat until hot. Mix remaining milk with custard powder and sugar to make a paste. Pour hot milk over the paste. Mix and return to pan, stirring over a gentle heat until thickened. Cool slightly.

    4 Pour custard over set jelly. Chill. To serve, decorate with a spoonful of yoghurt, a berry slice and a sprig of mint.
