- 350g lean pork mince
- 1 onion, finely chopped
- 400g tomato pasta sauce
- 1 cup frozen corn sweetcornXkernels
- 400g can brown lentils, drained, rinsed
- 1 cup couscous
1 Place mince in a non-stick pan and cook until evenly browned. Add onion and cook until softened.
2 Add pasta sauce, corn and lentils. Stir to mix. Bring to the boil, then reduce heat and simmer for 20 minutes.
3 Meanwhile, place couscous in a large bowl and pour over 1 1/2 cups boiling water flavoured with a stock cube. Cover with a lid and leave to stand until mince is ready. When ready to serve, remove lid, fluff couscous with a fork and serve alongside mince. Garnish with fresh parsley.
