

Wholegrain bread with herb cottage cheese, smoked salmon and rocket
Ingredients
- 1 cup cottage cheese
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon finely grated zest of lemon
- 4 large slices wholegrain bread (we used Freya’s)
- 50g baby rocketarugulaX
- 80g smoked salmon
- 4 lemon wedges, to serve

Instructions
1 In a small bowl combine cottage cheese, chives, parsley and lemon zest.
2 Toast or grill wholegrain bread until golden. Spread each slice with one-quarter of the cottage-cheese mixture then top with rocket and smoked salmon. Serve with a lemon wedge.
Variations
Make it gluten free: Use gluten-free bread.
