    • 1 cup light vanilla custard
    • 3 egg whites

    • ¾ cup castor sugar

    1 Preheat oven to 150ºC. Lightly spray a shallow 5-cup-capacity baking dish with oil. Combine apples and custard in dish.

    2 Use an electric beater to beat egg whites and salt until soft peaks form. With beater still running, slowly add sugar 1 tablespoon at a time, beating well after each addition until all sugar is added and mixture is thick and glossy.

    3 Spoon meringue onto apple mixture. Form meringue into swirls and peaks. Bake for 30-35 minutes until light golden on top.

    Variations

    Make it gluten free: Use gluten-free custard.
