Barbecued zucchini with garlic and mozzarella
Ingredients
- 4-8 zucchini/ courgettezucchiniXszucchini, summer squashX, thinly sliced lengthwise
- 3 cloves garlic, chopped
- 1 red onion, thinly sliced
- 125g fresh mozzarella, sliced

Instructions
1 Heat barbecue grill to medium heat and add vegies. Cook for a few minutes, turning often, until zucchini and onions soften. Turn barbecue off and leave to cool for a few minutes. Add mozzarella and toss together with vegies, so mozzarella melts slightly.
2 Lightly season and serve immediately as a side dish.
