Beef enchiladas

  • 400g lean beef mince
  • 300g jar salsa sauce
  • 420g can borlotti beans
  • 4 flour tortillas
  • ½ cup grated reduced-fat cheese
  • 1 small ripe avocado (or ½ large avocado)

    1 Place mince in a non-stick pan and cook until evenly browned. Add salsa and cook for a few more minutes.

    2 Drain and rinse beans. Add to mince. Heat through.

    3 Warm tortillas. Add a quarter of the filling to the centre of each tortilla. Wrap and secure with a cocktail stick.

    4 Sprinkle with cheese. Place under grill and cook until melted. Garnish with diced avocado. Serve with a mixed salad and sprinkle with parsley, if desired.

    Avocados are nutritious, but they're also high in fat and energy. One large avocado can contain 64g fat (mostly good, monounsaturated fats) and 2500kJ. So unless you need the extra energy, use in small amounts.
