Boiled eggs with dukkah soldiers
(at time of publication)
- 8 large eggs
- 8 slices wholegrain bread
- ½ firm ripe avocado, peeled, mashed
- 2 tablespoons dukkah
1 Place eggs in a medium-sized saucepan, cover with cold water and bring to the boil. Reduce heat and simmer for 6 minutes (for soft-boiled eggs) or until cooked to your liking then drain.
2 Meanwhile, toast or grill bread until golden. Spread toast with mashed avocado, sprinkle evenly with dukkah and cut in lengths. Serve soft-boiled eggs with dukkah soldiers.
Make it gluten free: Use gluten-free bread.
