Chicken, tomato and cucumber salad with hummus

Mediterranean flavors are front and centre in this quick recipe. It is full of lemon, mint, and hummus for a fresh and filling meal for one.

  • ½ cup sliced, cooked skinless chicken breast
  • ½ Lebanese cucumber, trimmed, chopped
  • ½ cup quartered cherry tomatoes
  • ½ small red capsicum, seeded, chopped
  • ¼ cup chopped fresh mint leaves
  • juice of 1 lemon
  • black pepper
  • 1 wholemeal wrap
  • 1 tablespoon hummus

    1 In a bowl combine chicken, cucumber, tomatoes, capsicum, mint and lemon juice. Season with pepper.

    2 Toast wrap in a sandwich press until golden then tear into pieces. Serve salad with toasted wrap and hummus.

    Variations

    You can also use 1/4 store-bought barbecue chicken (breast).

    Make it gluten free: Use a gluten-free wrap and check hummus is gluten free.

    Make it low FODMAP: Make homemade low-FODMAP hummus and use a corn tortilla instead.
