Christmas day ‘piña colada’
Ingredients
- 400ml unsweetened pineapple juice
- 1 cup light coconut cream
- ¹⁄³ cup lime juice, plus four lime slices for garnish (optional)
- 4 cups ice
- 4 wedges fresh pineapple, for garnish

Instructions
1 In a blender place the pineapple juice, coconut cream, lime juice and ice. Blend until smooth and creamy.
2 Pour into glasses and garnish with pineapple wedges and lime slices (if using).
