
Greens with goats’ cheese

Ingredients

- 4 cups fresh or frozen peas
- 4 cups baby spinach
- 80g goats’ cheese
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
Instructions
1 Microwave peas following packet instructions or until bright green (don’t overcook or you will lose valuable nutrients). Refresh under cold running water.
2 Combine peas with baby spinach. Crumble goats’ cheese over greens.
3 In a small jug, whisk together oil and lemon juice. Drizzle over greens and serve immediately.
Serving suggestion
Serve salad with white fish or grilled chicken breast and mashed kumara.
