- 1 cup Israeli couscous
- ½ quantity BBQ vegetable basic mix
- ⅓ cup pitted olives
- ½ cup chopped dates
- ½ cup artichoke hearts
- 4 tablespoons balsamic dressing
- 4 tablespoons torn basil
- 100g mozzarella cheese balls
- 1 bunch vine tomatoes
1 Bring a pan of lightly salted water to the boil. Add couscous and boil for about 5-6 minutes, stirring occasionally. Drain then place in a bowl.
2 Add BBQ vegetables with olives, dates, artichokes and dressing. Stir through basil.
3 Serve with mozzarella and tomatoes.
