Ham and courgette pasta

- 400g penne
- olive oil spray
- 200g shaved lean ham, sliced
- 2 large courgetteszucchini, summer squashX, trimmed, grated
- 3 large tomatoes, diced
- 4 tablespoons shaved parmesan, to serve

1 Cook pasta following packet directions until al dente.
2 Meanwhile, spray a large non-stick frying pan with oil. Heat over a medium heat. Cook ham and courgettes for 4-5 minutes until light golden. Add tomatoes. Heat through for 1-2 more minutes.
3 Drain pasta, then return to saucepan with vegetable and ham mixture. Toss well. Serve with shaved parmesan.
