

Mini meatballs in a baked bean sauce with leafy green salad and crusty bread

Ingredients
- 500g beef mince
- 2 onions, chopped
- 1 carrot, grated
- ½ cup breadcrumbs
- 1 teaspoon cumin
- 1 egg
- 2 cloves garlic, chopped
- 1 capsicum, chopped
- spray oil
- 1 can light baked beans
- 1 teaspoon sweet paprika
- 400g can tomatoes
- 250g snow peas
- 130g bag spinach
- 4 tablespoons parmesan cheese
- 1 loaf crusty bread

Instructions
1 Mix mince, 1 chopped onion, carrot, breadcrumbs, cumin, egg and salt and pepper to taste. Shape in small meatballs and gently fry in a non-stick pan. Cook in batches and place on paper towel once cooked. Set aside.
2 Gently fry remaining chopped onion, garlic and capsicum with some oil spray. Add baked beans, paprika and tomatoes to pan with meatballs and leave to simmer for 15 minutes.
3 Meanwhile, mix snow peas, spinach and parmesan together to make a salad. Serve meatballs with crusty bread and salad.
