Moroccan beef koftas with snow pea pearl couscous
Ingredients
- 500g lean beef mince
- 1 brown onion, grated
- 3 cloves garlic, crushed
- ½ cup fresh parsley leaves, finely chopped
- ½ cup fresh coriandercilantroX leaves, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 250g pearl couscous
- 1 cup Greek-style yoghurt
- 1 lemon, juice and zest
- 250g snow peas, sliced thinly
- 2 cups baby rocketarugulaX
- 2 spring onions, sliced thinly

Instructions
1 In a large bowl, add beef mince, onion, garlic, parsley, coriander, cumin and paprika. Mix to combine and shape into 10 cigar-shaped koftas.
2 To a large pot, add couscous and 500ml water. Bring to the boil over high heat, then reduce heat, cover and simmer for 10 minutes until cooked and liquid is absorbed. Set aside.
3 Heat a grill pan over medium high heat. Cook koftas for 5 minutes on each side until cooked through.
4 In a small bowl, mix yoghurt, lemon juice and zest. Add snow peas, rocket and spring onion to cooled couscous. Serve koftas with couscous and lemon yoghurt on the side.
HFG tip
Use extra lemon zest to garnish. Try using lamb or pork mince instead of beef.
