Pork steaks with apple and walnut slaw

  • 4 pork steaks
  • 1 tablespoon olive oil
  • ½ cup skim milk
  • 5 spring onions, sliced
  • 4 cups shredded cabbage
  • 1 large red apple, sliced
  • 2 tablespoons chopped walnuts
  • 3 tablespoons chopped pitted prunes

    1 Heat a large non-stick frying pan or wok until hot. Place pork steaks in a shallow dish with 1/2 tablespoon oil. Turn to coat. Fry for 2-3 minutes on each side until golden. Add milk and simmer for 3-4 minutes until reduced by half. Remove pork and liquid from the pan and keep warm.

    2 Place pan back over the heat (there's no need to wash it – just wipe out with some kitchen paper) and add the remaining 1/2 tablespoon oil. Add the spring onions and cabbage and stir-fry for 5 minutes until softened slightly. Add the apple, walnut and prunes and fry for 1-2 minutes. Return pork and liquid to pan, cook for 1-2 minutes, then divide among four plates.
