Raisin toast with ricotta, fruit and seeds
- 2 thick slices wholemeal raisin bread
- ¼ cup reduced-fat ricotta
- 1 nectarine, sliced
- ½ cup fresh berries
- 1 tablespoon dried fruit, nut and seed mix
- 1 teaspoon honey, to serve

1 Toast bread. Spread with ricotta, then top with nectarine, berries and nut mix. Serve drizzled with honey.
Replace nectarines and berries with any seasonal fresh fruit.
➜ Stir ½ teaspoon vanilla paste into the ricotta.
➜ Serve drizzled with maple syrup instead of honey.
➜ Soak the bread in egg and milk and pan fry to make fruity French toast.
➜ Use gluten-free fruit bread.
