Ruby poached pears

  • 1 ½ cups cranberry juice
  • 1 ½ cups apple juice
  • 1 vanilla pod, cut in half
  • ¼ teaspoon mixed spice
  • ½ orange, zest (optional)
  • 5 tablespoons sugar
  • 4 firm pears, peeled

    1 Place juices in a small deep pan with vanilla pod, mixed spices, orange zest (if using) and sugar. Heat until sugar is dissolved.

    2 Add peeled pears to pan, making sure they are covered with liquid. Bring to the boil. Simmer covered for 25 minutes, or until pears are tender.

    3 Transfer pears to a warm dish. Return 2 cups fruit juice syrup to the same pan. Bring to the boil.

    4 Boil rapidly for 10 minutes, or until syrup is reduced by half. Serve pears hot or cold.
