Spiced carrot, capsicum and corn fritters

Our low-calorie spiced carrot, capsicum and corn fitter recipe is a healthy option for a light meal, side dish or lunch. High in fibre, packed full of flavour and loaded with seasonal vegetables, this will be a family favourite.

  • 1 small red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 eggs
  • ¼ cup skim milk
  • ½ cup self-raising flour
  • 1 cup corn kernels
  • 300g carrots, grated
  • 1 small red capsicum, diced
  • 2 tablespoons chopped fresh coriander

    1 Place a small frying pan over a medium heat and spray with oil. Add onion and cook for 5 minutes or until softened. Add garlic and spices and cook, stirring, for 1 minute. Set aside to cool.

    2 Whisk eggs, milk and flour in a bowl. Stir in corn, carrots, capsicum, coriander and onion mixture. Season with black pepper.

    3 Place a large non-stick frying pan over a medium heat and spray with oil. Spoon 1/4 cup mixture per fritter in pan, 3 fritters at a time. Cook for 3 minutes each side or until golden. Repeat to make 12 fritters. Serve.

    Variations

    Make it gluten free: Use gluten-free flour and check spices are gluten free.
