Strawberry clafoutis

Quick, simple and extremely satisfying, this healthier strawberry clafoutis is the perfect dessert to serve at your next summer dinner party

  • 350g small strawberries, hulled
  • 3 eggs
  • ¼ cup castor sugar
  • ¾ cup plain flour
  • ¾ cup skim milk
  • 2 teaspoons vanilla extract

    1 Preheat the oven to 190°C/fan 170°C/gas 5. Lightly oil a 20cm round baking dish or ovenproof frying pan. Scatter the strawberries over the base of the dish.

    2 Whisk the eggs, sugar, flour, milk and vanilla extract to make a smooth batter. Pour the mixture over the strawberries.

    3 Bake for 25–30 min until the batter is golden around the edges, but still has a little wobble in the middle. Leave for 10 min, then slice and serve.
