Smoked salmon, orange and avocado salad

  • ⅓ cup orange juice
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons Dijon mustard
  • ½ teaspoon lemon pepper (optional)
  • ½ teaspoon black pepper
  • 1 cos lettuce, torn or sliced
  • 2 oranges, peeled, cut into wedges
  • 1 avocado, de- stoned, cut in wedges
  • 1 bunch fresh mint
  • 200g smoked salmon, roughly chopped
  • 4 grainy bread rolls

    1 In a lidded jar combine juice, oil, mustard, lemon pepper (if using) and pepper. Secure lid and shake until well combined.

    2 In a large bowl combine lettuce, oranges, avocado, mint and salmon. Add dressing and toss until well combined. Serve immediately with bread rolls.

    Variations

    Prawns would work instead of salmon in this fresh salad.
