

Beef, spinach and feta cannelloni with pine nuts

Ingredients
- spray oil
- 400g lean minced beef
- 1 medium capsicum, finely diced
- 2 medium carrots, grated
- 1 cup cooked spinach
- 50g (3 tablespoons) tomato paste
- 1 teaspoon stock powder
- ½ cup water
- 3 spring onions, green part only, finely sliced
- 3 tablespoons toasted pine nuts
- 60g feta cheese, crumbled
- Sauce
- 2 x 400g cans chopped tomatoes
- 1 tablespoon sugar
- ½ teaspoon garlic salt
- ½ teaspoon chilli flakes
- 2 teaspoons dried oregano or basil
- 250g gluten-free lasagne sheets
- ¾ cup (75g) freshly grated mozzarella cheese (see tip)
- ¼ cup (25g) freshly grated parmesan cheese (see tip)
- 3 tablespoons toasted pine nuts

Instructions
1 Preheat oven to 180°C. Spray heavy-bottomed fry pan with oil, brown mince and red pepper for a few minutes until mince is almost cooked. Add carrot, spinach, tomato paste, stock powder and water and cook for around 5 minutes. Add spring onion, pine nuts and feta and stir to combine; set aside to cool.
2 Make sauce by pureeing all ingredients together. In a large pot of boiling salted water, cook lasagne sheets until they are flexible enough to roll (around 6-7 minutes); drain and run some cold water through to cool.
3 Pour a little of the sauce in the bottom of a large lasagne dish. Lay lasagne sheets on a large board and put a suitable amount of filling at one end, roll up and place in dish. Repeat to make 12 rolls.
4 Pour sauce over top then sprinkle with cheeses; bake for around 35-40 minutes. Sprinkle with pine nuts. Serve with a green salad.
Variations
Make a lasagne using the filling between lasagne sheets, together with a bit of the sauce. Reserve enough sauce for the top and finish with cheese and pine nuts.

- You can make this cannelloni in one large baking dish, or six individual dishes (as pictured).
