Chocolate and apricot slice

  • 310g bottle apple sauce
    • ½ cup cocoa powder
    • 1 teaspoon baking powder
    • 1 cup flour
    • 1 egg, beaten
    • ¼ cup skim milk
    • ½ cup dark chocolate chips
    • 15 dried apricots, halved

    1 Heat oven to 175ºC. Grease a 24x16cm baking tin with a little reduced-fat spread.

    2 In a large bowl, mix apple sauce and dry ingredients until just combined. Do nox over-mix. While stirring gently, add egg and milk. Add chocolate chips then apricots.

    3 Pour into prepared tray and bake for 30 minutes until springy to touch. Leave to cool and cut in 12 slices. Store in an airtight container for 2-3 days or freeze sliced portions.
