Cottage cheese and mixed bean stuffed potatoes

Potatoes deliciously stuffed with mixed beans and cheese make for a filling vegetarian meal!

Ingredients

- 1 pack low-fat cottage cheese
- 4 large potatoes
- 400g can four bean mix
- 1 bunch chives
- parmesan cheese
- mustard (grainy or Dijon) to taste

Instructions
1 Clean the potatoes, pierce them and cook for 10-12 minutes in the microwave on high. Combine the cottage cheese, beans, chopped chives and mustard in a bowl.
2 Cut a cross in the top of each potato and pull open. Make a space for the filling by scooping out a little of the potato flesh if you like.
3 Spoon the cottage cheese mixture into the potatoes and sprinkle with parmesan. Pop under a hot grill for 5 minutes until the cheese is melted, and enjoy.
