Creamy chicken and ham bake
Ingredients
- 2 teaspoons olive oil
- 1 onion, finely chopped
- 100g lean shaved ham, finely chopped
- 3 cups (200g) button mushrooms, sliced
- 500g can 98% fat-free creamy chicken soup
- 2 teaspoons Dijon mustard
- 4 x 150g skinless chicken breast fillets

Instructions
1 Preheat oven to 200°C. Heat oil in a non-stick frying pan over a medium heat. Add onion, ham and mushrooms. Cook, stirring occasionally, for 5 minutes, or until onion is soft. Stir in soup and mustard. Bring to the boil. Remove from heat.
2 Place chicken fillets in a single layer in an ovenproof dish. Pour soup mixture over chicken and bake for 25 minutes, or until chicken is cooked through. Serve with sauce.
