Green beans with artichokes and sweet potatoes
Ingredients
- 2 tablespoons olive oil
- 1 brown onion, chopped
- 2 teaspoons Greek spice mix
- 1 clove garlic, crushed
- 2 tablespoons tomato paste
- 375g green beans, trimmed
- 280g jar marinated artichokes, drained and halved
- 350g sweet potato/ kumarasweet-potatoX, peeled and chopped
- 2 x 400g cans crushed tomatoes
- 2½ cups reduced-salt vegetable stock
- ¼ cup fresh parsley leaves, finely chopped

Instructions
1 Add oil to a large pot and cook onion and spice mix over medium heat for 8 minutes. Add garlic and tomato paste and cook for a further 2 minutes.
2 Add beans, artichokes and sweet potato and coat in the onion mixture. Add tomatoes and stock and bring to a boil. Reduce heat to low and simmer for 30 minutes.
3 Scatter with parsley to serve.
Serving suggestion
Serve with crumbled feta and cooked quinoa for extra protein and creaminess.
