Hot peppermint chocolateReviewed by our expert panel
(at time of publication)
- 2 cups unsweetened almond milk (see tips)
- 2 tablespoons cocoa powder
- 2 tablespoons maple syrup
- ½ teaspoon vanilla paste
- few drops mint essence
- fresh mint sprigs
- 16 mini marshmallows (4 mini marshmallows per serve)
1 Mix all but ¼ teaspoon of the cocoa and maple syrup to make a smooth paste.
2 In a saucepan, combine milk, cocoa paste and mint essence and heat over medium until hot.
3 Pour into 4 mugs. Sprinkle with remaining cocoa. Add mint sprig and 4 mini marshmallows to each mug. Serve.
Make it vegan: Use vegan marshmallows and almond milk.
Use dairy milk if you prefer.
Use heatproof glasses if you have them, as cocoa powder separates a little, giving a slight ripple effect that kids love.
