Hot peppermint chocolate

Here's a hot chocolate drink the kids can make on a cold winter's day - check the marshmallows for a vegan version.

  • 2 cups unsweetened almond milk (see tips)
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla paste
  • few drops mint essence
  • fresh mint sprigs
  • 16 mini marshmallows (4 mini marshmallows per serve)

    1 Mix all but ¼ teaspoon of the cocoa and maple syrup to make a smooth paste.

    2 In a saucepan, combine milk, cocoa paste and mint essence and heat over medium until hot.

    3 Pour into 4 mugs. Sprinkle with remaining cocoa. Add mint sprig and 4 mini marshmallows to each mug. Serve.

    Variations

    Make it vegan: Use vegan marshmallows and almond milk.

    HFG tip

    Use dairy milk if you prefer.

    Use heatproof glasses if you have them, as cocoa powder separates a little, giving a slight ripple effect that kids love.
