Lamb and rocket salad
The juicy lamb turns this salad into a nutritious meal for one.

Ingredients

- Salad
- ½ can lentils in spring water, drained
- 100g cooked leftover lamb or beef steak, sliced
- 1 cup rocketarugulaX leaves, roughly torn
- ½ red capsicum, chopped
- 2 tablespoons crumbled feta
- Dressing
- 1 teaspoon pomegranate molasses (or balsamic vinegar)
- 1 tablespoon extra virgin olive oil
- black pepper and salt, to taste
Instructions
1 Combine salad ingredients and mix well.
2 Combine dressing ingredients and pour over salad. Toss well.
