

One-dish fish bake with potatoes and peppers
Ingredients
- 2 floury potatoes, sliced
- 2 tomatoes, thickly sliced
- 4 marinated peppersbell peppersX (we used Peppadew Goldew peppersbell peppersX) or 1 orange capsicum, cut in chunks
- olive spray oil
- 2 frozen dory fillets
- 4 tablespoons Cheesy crumbs (see instructions)
- 2 tablespoons grated parmesan cheese

Instructions
1 Preheat oven to 200°C. Cook potatoes in boiling water for 5-6 minutes. Drain.
2 Place potatoes, tomatoes and peppers in a lightly greased baking dish. Place fish on top. Spray with oil.
3 Sprinkle with crumbs. Cook for 20 minutes then add parmesan. Cook another 5-10 minutes until cheese is melted and golden. Serve with green vegetables such as beans or silver beet.
Cheesy crumbs
1 slice whole grain or sourdough bread
2cm chunk parmesan cheese
handful fresh parsley
fresh or dried chilli, to taste (optional)
1 Place all ingredients in a blender or mini-chopper and whiz to make chunky breadcrumbs.
Variations
Make it gluten free: Use gluten-free bread in Cheesy crumbs.
