

Quick meatballs in tomato sauce

Ingredients
- 250g pasta spirals
- 500g lean beef mince
- 2 cloves garlic, crushed
- ½ cup wholemeal breadcrumbs
- 1 teaspoon dried mixed herbs
- 1 egg, lightly beaten
- 2 cups tomato passata
- 400g can chopped tomatoes
- 8 cups green salad tossed with
- a little vinaigrette, to serve

Instructions
1 Cook pasta in a large saucepan of boiling water following packet directions. Drain, return to pan and cover to keep warm.
2 Meanwhile, combine mince, garlic, breadcrumbs, mixed herbs and egg in a bowl. Shape meatballs in 1 tablespoon sizes. Spray a large frying pan with oil and place over a medium-high heat. Cook meatballs in batches, turning, for 3-4 minutes or until browned.
3 Meanwhile, bring tomato passata and tomatoes to the boil in a medium-sized saucepan. Add browned meatballs. Reduce heat, cover, and simmer for 15 minutes or until meatballs are cooked. Serve meatballs with pasta and salad. Garnish with grated parmesan if preferred.
Variations
Make it gluten free: Use gluten-free pasta and breadcrumbs and check passata and vinaigrette are gluten free.
