Roasted tomato passata

This simple passata packs a punch, and can be used in everything from pasta to pizza.

  • 3 cloves garlic, chopped
  • 4 sprigs thyme, leaves only
  • 1 teaspoon sugar
  • 2 tablespoons olive oil

    1 Preheat oven to 200°C. Place tomatoes in an ovenproof dish and sprinkle with garlic, thyme leaves and sugar.

    2 Drizzle with oil and roast for 45 minutes until softened. Remove from oven and either purée in a processor or with a stick blender. Season with pepper.
