Vanilla poached apricots

  • 5 tablespoons soft brown sugar
  • 1 vanilla bean, split in half
  • juice of 1 lime
  • 8 firm apricots
  • 4-6 tablespoons reduced-fat Greek yoghurt, to serve

    1. In a saucepan place 1 3/4 cups water and sugar and heat until sugar dissolves. Bring to a simmer. Add vanilla bean, lime juice and apricots. Cook for 5-6 minutes, turning several times to poach evenly.
    2. Remove apricots from syrup and set to one side. Bring syrup to a rapid boil and heat for 2 minutes until liquid is reduced by a quarter. Pour syrup over apricots. Chill.
    3. Before serving, remove vanilla bean. Serve two apricots each with yoghurt.

    Variations

    If you prefer apricots to remain firm, reduce poaching time by a couple of minutes.
