Vegan pumpkin seed and almond granola bars

These vegan cereal bars are sweet and chewy, with added almonds for an extra crunch. Great for breakfast or a snack on the go!

  • ¾ cup plus 1 tablespoon porridge oats
  • ¾ cup plus 1 tablespoon jumbo oats
  • ¾ cup raisins
  • ⅔ almonds, roughly chopped
  • ⅓ cup pumpkin seeds
  • ⅓ cup sunflower seeds
  • 2 teaspoon ground cinnamon
  • ¼ cup ground chia seeds
  • 2 tablespoon almond butter
  • 6 medjool dates, pitted
  • ½ cup maple syrup

    1 Heat the oven to 200°C/ fan 180°C/gas 6. Line a baking tray with non-stick baking paper. In a large bowl, mix together both types of oats, the raisins, almonds, pumpkin seeds, sunflower seeds, cinnamon and chia seeds.

    2 Put the almond butter, dates and maple syrup in a food processor and pulse until smooth. Stir this mixture into the dry ingredients and mix well until everything becomes sticky.

    3 Pour the mixture into the prepared baking tray and bake for 25 min until golden. Once cooked, remove and leave to cool before cutting into 12 even-sized bars.

    If you prefer, you can just use one variety of oats and double the quantity.
