

Wonton soup
Ingredients
- 2 cups reduced-salt chicken stock
- 3 cups water
- 3cm piece fresh ginger, cut into matchsticks
- 1 clove garlic, crushed
- 250g packet frozen beef mini dim sims (we used Ho Mai brand)
- 2 large carrots, peeled and cut into 5cm-long matchsticks
- ¼ Chinese or regular cabbage, shredded
- ½ cup salt-reduced soy sauce
- 1 cup bean sprouts
- 100g fresh or frozen green beans, sliced
- 4 spring onions, sliced
- 1 red chilli, thinly sliced
- ½ cup coriandercilantroX, chopped

Instructions
1 Place the stock, water, ginger and garlic in a large saucepan over medium-high heat. Cover and bring to the boil. Reduce heat to low. Add the dim sims and simmer for 5 minutes, or until cooked through.
2 Add the carrot, cabbage and soy sauce. Stir to combine and simmer for a further 2-3 minutes, or until vegetables are just tender. Remove from heat.
3 Stir in beans and bean sprouts. Ladle into serving bowls. Top with onion, chilli and coriander.
