Almond pork pilaf

Ingredients

  • spray oil
    • 1 onion, chopped
    • 50g sliced almonds
    • 1 cup basmati rice
    • 1 ½ cups liquid vegetable stock
    • 4 cups cooked frozen mixed vegetables
    • 4 pork loin steaks (around 400g), excess fat removed
    • 2 teaspoons all-purpose seasoning

    1 Spray a pot with oil and heat. Add onion and fry until golden. Add almonds, rice and stock and cover. Simmer until rice is cooked then fluff with a fork and stir through vegetables.

    2 Heat non-stick frying pan with oil spray. Sprinkle pork with seasoning. Fry until cooked.

    3 Serve pork on top of pilaf with a scattering of fresh coriander if preferred.

    Variations

    Make it gluten free: Check stock and seasoning are gluten free.
