Beef with noodles in curry sauceReviewed by our expert panel

- 350g lean beef
- 300g rice noodles
- 2 x 200g packs steamed vegetables
- olive spray oil
- 10 mushrooms
- 2 tablespoons green curry paste
- 165g light coconut cream
1 Cut beef in thin strips. Place noodles in boiling water. Cook for 6-8 minutes until soft. Drain. Cook steamed vegetables following packet directions.
2 Heat a non-stick pan for a few minutes with a little spray oil. Cook beef until evenly browned.
3 Add mushrooms with curry paste and cook for 3-4 minutes.
4 Add coconut cream and heat for a few minutes. Drain noodles and place in warmed serving bowls. Serve beef and vegetables with the noodles.
Make it gluten free: Use gluten-free curry paste.
