Chewy raspberry oat bars

These raspberry oat bars are a great lunch box addition or snack.

  • ¼ cup unsweetened apple sauce
  • ¼ cup maple syrup
  • 1 ripe banana, mashed
  • 1 teaspoon natural vanilla extract
  • 160g rolled oats
  • 2 tablespoons chia seeds
  • 100g raspberries

    1 Preheat the oven to 160°C. Line a square 20cm baking tin with baking paper.

    2 Combine the apple sauce, the maple syrup, banana and vanilla in a bowl. Add the oats and chia seeds, and mix to combine.

    3 Next gently fold through the raspberries and transfer the mixture to the prepared tin. Press down gently with the back of a spoon to even out and smooth the top.

    4 Bake mixture for 20 minutes, then cool completely on a wire rack and cut into six bars.

      This time of the year …. could you use frozen or canned berries?

        Hi Angela
        Thawed frozen berries should be fine. Just tip out any juice that forms in the thawing process before using.
