

Speedy chicken and chilli bean burritos

Ingredients
- spray oil
- 350g skinless chicken, sliced thinly
- 1 onion, finely diced
- 1 clove garlic, crushed
- 2 tablespoons reduced-salt tomato paste
- 400g can chilli beans
- ½ cup reduced-fat sour cream
- 4 large wholegrain tortillas
- 4 cups shredded lettuce
- 4 tomatoes, chopped
- ½ red onion, sliced
- ½ cup salsa

Instructions
1 Spray a non-stick pan with oil. Brown chicken in batches, then remove and set aside.
2 Spray pan again and add onion and garlic. Stir in tomato paste and chili beans. Return chicken to pan and simmer for 5 minutes. Remove from heat and stir in sour cream.
3 Warm tortillas for 30 seconds in microwave. Make up burritos with lettuce, tomatoes, red onion and salsa.
Variations
Make it gluten free: Check tomato paste, chilli beans and light sour cream are gluten free. Use gluten-free tortillas.
