Chicken meatballs with beetroot salsa

- 500g chicken mince
- 1 tablespoon lemongrass paste or coriandercilantroX paste
- 1 red onion, finely chopped
- 1 teaspoon cumin seeds
- olive oil spray
- 150g canned or cooked beetrootbeetsX, diced
- 2 tablespoons fresh coriandercilantroX
- ½ lime, juice
- 4 wholemeal pita bread
1 Place mince, herb paste, half the onion and cumin in a bowl. Season and mix together.
2 Divide into 25 even-sized balls. Heat a non-stick frying pan for a few minutes. Spray with a little oil and cook meatballs until evenly browned and cooked through.
3 To make beetroot salsa, mix together remaining onion, beetroot, fresh coriander and lime juice.
4 Serve balls in pita bread with crispy lettuce, cherry tomatoes, beetroot salsa and 1 tablespoon plain, low-fat yoghurt.
