- 1 cup grated carrot
- ½ cup dried apricots, chopped
- ½ cup sultanasgolden raisinsX
- 1 medium apple, peeled and chopped
- ¼ cup apple juice
- ¼ cup orange juice
- ¾ cup water
- ¼ cup raw sugar
- 1 cup self-raising flour
- ½ cup plain flourall purpose flourX
- 1 teaspoon baking soda
- 3 teaspoons ground cinnamon
- 2 medium bananas, sliced thinly
1 Preheat oven to 180°C. Line a loaf pan with baking paper.
2 Place carrot, apricots, sultanas, apple, juices, water and sugar in a medium saucepan. Bring to the boil then simmer uncovered for 15 minutes. Cool to room temperature.
3 Stir in the sifted dry ingredients and banana. Spread mixture into a loaf tin and bake for 1 hour.Recipe supplied by Healthy Food Guide reader, Caroline Wharry
