Ham and noodle fritters
(at time of publication)
- 2 x 75g packets 2-minute noodles
- 6 eggs
- 200g lean shaved ham, chopped
- 5 spring onions, thinly sliced
- ½ cup corn sweetcornXkernels, drained
- spray oil, to grease
1 Discard noodle seasoning and cook noodles following packet directions. Drain well. Cool.
2 Whisk eggs in a large bowl. Add noodles, ham, spring onions and corn. Stir until well combined.
3 Heat a medium-sized frying pan with a little oil spray and pour 1/4-cupfuls of mixture to make 1 fritter. Cook for 2 minutes or until golden and egg is set. Turn and cook 1-2 more minutes or until egg is cooked through. Transfer to a large plate. Cover to keep warm.Cook remaining fritters.
Side of bok choy and salt-reduced soy sauce, to dip
