

Soy maple beef on rice

Ingredients
- 700g beef rump steak, excess fat removed, cut in chunks
- ¼ cup maple syrup
- ⅓ cup salt-reduced soy sauce
- 1 tablespoon crushed fresh ginger
- 2 cups rice
- olive spray oil
- 2 red capsicums, deseeded, roughly chopped
- 2 cups button mushrooms, chopped
- 4 cups broccoli, steamed
- 2 cups frozen peas

Instructions
1 In a medium-sized bowl mix beef, maple syrup, soy sauce and ginger until combined. Set aside to marinate for 20 minutes.
2 Cook rice following packet directions.
3 Heat a non-stick frying pan with oil and stir-fry vegetables until softened. Add beef and half of the soy marinade. Add peas and stir-fry until beef is cooked through.
4 Serve immediately with rice.

Variations
Leftovers to lunch: Soy maple beef and rice salad
Serves 2
2 tablespoons unsalted cashew nuts
1/3 cup chopped fresh parsley
2 serves leftover Soy maple beef on rice
Add cashews and parsley to beef and rice. Toss to combine. Keep chilled. Serve hot (heat in microwave for 2 minutes) or cold.
Make it gluten free: Use gluten-free soy sauce.
