Pork and bean jacket potatoes

  • 4 jacket potatoes, washed
    • spray oil
    • 250g lean pork steak, sliced
    • 1 onion, finely chopped
    • 400g can baked beans, Boston style
    • 390g black beans in chilli sauce
    • 1 teaspoon smoked paprika

    1 Preheat oven to 200°C. Prick potatoes and cook 2 at a time in the microwave on high for 7 minutes. Place on a baking tray and spray with oil. Cook in oven for 20 minutes while the filling is prepared.

    2 Heat a non-stick pan with oil spray. Cook pork and onion until softened. Add beans and paprika and heat through.

    3 Divide the topping among jacket potatoes and serve.

    Serving suggestion

    Sprinkle with parsley. Serve with a spoonful of reduced-fat sour cream.

    Variations

    Cooking potatoes partly in the microwave then in the oven gives the vege a crisper skin. Alternatively, cook potatoes in the microwave on high, 2 at a time, for 8-9 minutes.
