Greek-style beef meatball subs

  • 2 small red onions, 1 thinly sliced, 1 finely chopped
  • 2 tablespoons beetroot apple cider vinegar
  • 500g lean beef mince
  • 1 teaspoon dried oregano
  • 1 small zucchini/ courgette, grated
  • 400g frozen sweet potato fries
  • 4 six-inch wholemeal sub rolls, halved, toasted
  • ½ cup tzatziki
  • 120g mixed salad leaves
  • ½ cup tomato sugo sauce

    1 Preheat oven to 200°C. Line two baking trays with baking paper. Place onion slices and vinegar in a small bowl to pickle for 10 minutes.

    2 Place beef, chopped onion, oregano and zucchini in a large bowl, mixing well to combine. Roll mixture into 10 meatballs and place on one prepared tray. Place fries on second prepared tray. Transfer both trays to oven and cook for 20 minutes or until fries are golden and meatballs are cooked through.

    3 Spread roll bases with tzatziki. Top with lettuce, meatballs and pickles. Drizzle over tomato sugo sauce, then serve with fries.

    HFG tip

    To make your own fries, rinse two large sweet potatoes to remove any grit and dirt from the skin, then use a sharp knife to cut into thin, long batons.
