Lamb koftas with roasted vege salsa

  • 500g lamb mince
  • ¼ cup mint, chopped
  • 50g feta cheese
  • 1 teaspoon chilli paste
  • spray oil
  • 8 wholemeal mini pita breads, toasted
  • Salsa
  • 1 red capsicum, deseeded, chopped (or use shop-bought chargrilled red capsicum from a jar)
  • 1 onion, chopped
  • spray oil
  • 3 tomatoes, chopped
  • 2 tablespoons lime juice
  • 4 cups rocket

    1 Heat oven to 220 °C. Place capsicum and onion on a baking tray lined with baking paper. Spray with oil and place in oven for 25 minutes.

    2 In a bowl mix mince, mint, feta and chilli paste until combined. Shape into 8 cigar-shaped kofta rolls.

    3 Heat a non-stick frying pan with oil spray and brown each kofta. Place koftas on another baking tray and place in oven for 15 minutes until cooked through.

    4 Remove capsicum and onion from oven and mix with tomatoes and lime juice.

    5 Serve toasted pita breads stuffed with koftas and rocket and top with roasted vege salsa.
