Microwave banana pudding

Whip up this delicious, low calorie microwave pudding recipe up in less than 15 minutes, super easy and a great one for the kids to make!

  • 100g reduced-fat spread
    • 3 ripe bananas, mashed
    • 100g (¾ cup) light soft brown sugar
    • 100g (¾ cup) self-raising flour
    • 2 teaspoons ground cinnamon
    • 2 eggs
    • 3 tablespoons skim milk
    • icing sugar and ground cinnamon, for dredging

    1 Place spread in a 1L microwave-proof dish and cook on high for 30 seconds to 1 minute or until melted. Add bananas.

    2 Add sugar, flour, cinnamon, eggs and milk and mix together. Cook on high for 8 minutes or until sponge is just cooked through and slightly risen. The sponge may look a little moist on the surface but this will dry out. Serve warm with a dusting of icing sugar and ground cinnamon.

    Variations

    Make individual puddings in microwave-proof ramekins. Cook for 1 minute to 1 minute 10 seconds.
