

Pea, mint and spinach mash
Ingredients
- 4 cups frozen peas, thawed
- 4 cups baby spinach
- ½ cup fresh mint
- 1 lemon, zest
- ½ lemon, juice
- 2 tablespoons extra-virgin olive oil

Instructions
1 Steam or microwave peas and spinach for 2 minutes.
2 Place all ingredients in a large bowl and use a stick blender or food processor to blend until a rough mash-like texture. If needed, add a little liquid salt-reduced stock or hot water if you need to thin the texture. Season with black pepper and salt to taste.
Serving suggestion
Great with:
- roasted or pan-fried lamb
- grilled fish
