

Pulled pork buns with broccoli slaw and sauerkraut
Ingredients
- 2 wholegrain buns
- 240g leftover cooked roast pork, shredded
- 2 tablespoon barbecue sauce
- 4 Brussels sprouts, finely sliced
- 1 cup finely sliced broccolini or broccoli (stalks and leaves)
- 2 tablespoons low-fat plain yoghurt
- 2 teaspoons mayonnaise
- 4 teaspoons toasted pumpkin or sesame seeds
- 4 tablespoons sauerkraut
- hot sauce, to serve (optional)

Instructions
1 Halve and toast buns. Combine pork and barbecue sauce and top each bun half with pork.
2 In a bowl, combine Brussels sprouts and broccoli. Add yoghurt and mayonnaise, and mix well to combine.
3 Serve buns topped with seeds, sauerkraut and hot sauce, with slaw on the side.
